Gorgeous Pink Beet Latte with Rose Petals

Freeze-dried Blueberry Popsicles

Introduction

I love this beet latte — it looks beautiful in a cup, tastes grounding, and can be thrown together quickly. When I’m serving it for myself or for guests, it always feels quietly elegant; the color alone does most of the work.

A quick tip for flavor - I always use freshly ground cardamom, which brings a soft warmth and depth that pairs beautifully with beets. Freshly ground makes all the difference here. That said, you could use a different spice — ground cinnamon works just as well and gives the latte a more familiar, cozy feel. It’s a forgiving recipe, easy to adjust, easy to love, and meant to be enjoyed without fuss.
