In the Wild This June: Harvest, Herbs & Fresh Plants

Harvest montage

June is one of the most exciting months in the herbal year.

The days are longer, the fields are full of life, and fresh plants are beginning to arrive at our facility each day. This is the season when the work becomes very real: boots in the field, fresh plant material coming through the doors, and the unmistakable scent of summer harvest.

At Eclectic Herb, so much of what we do begins with the plant itself — where it was grown, when it was harvested, how quickly it was handled, and how carefully it was preserved.

This month, we invite you behind the scenes for a photographic journey through the fresh herbs of June and the beautiful, busy season of harvest.

Harvesting Milky Green Oats

One of the special herbs arriving this month is Milky Green Oats. This plant is harvested during a very short window, when the fresh oat tops are still green and release a soft, milky sap when pressed.

That “milky” stage is what herbalists look for — and it does not last long. Harvest too early, and the oats are not ready. Harvest too late, and the plant has already moved on to seed.

Milky Oats are also difficult to preserve well using ordinary drying methods. So much of what makes this herb special is tied to that fresh, green, milky stage, which can be quickly lost once the plant begins to dry down.

That is why we fresh freeze-dry Milky Green Oats soon after harvest. Freeze-drying helps preserve the delicate qualities of the fresh plant and keeps the herb as close to that just-harvested stage as possible.

It is one of those herbs that reminds us why timing, freshness, and careful handling matter so much — from the field all the way to the bottle.

Milky Green Oats Benefits

Milky Green Oats are harvested during a very short window, when the fresh oat tops are still green and release their soft, milky sap. This delicate stage is what herbalists treasure most.

  • Traditionally used to nourish and support the nervous system
  • Helpful during times of everyday stress or depletion
  • Supports a sense of calm and resilience
  • Harvested during the fresh green “milky” stage, when the plant is at its most delicate
  • Freeze-dried to help preserve the qualities of this fleeting fresh stage

Beautiful Calendula in Bloom

Few herbs capture the feeling of summer quite like Calendula. This year, we planted Calendula on our own farm, and the bright orange flowers are beginning to glow across the rows.

Each blossom is harvested at its peak, when the flowers are open, vibrant, and full of color. From there, careful handling matters. Calendula is a delicate flower, and its beauty can fade quickly if it is not preserved well.

That is why we fresh freeze-dry Calendula soon after harvest. Freeze-drying helps protect the flower’s vivid color, fresh-picked quality, and naturally occurring plant compounds.

For us, Calendula is more than a beautiful flower in the field — it is a reminder of the care that goes into every herb we grow, gather, and preserve.

Harvesting St. John’s Wort from the Wild

St. John’s Wort is one of the unmistakable signs of early summer here in Oregon. Its bright yellow flowers begin appearing along roadsides, field edges, and wild places just as the days are at their longest.

Traditionally, St. John’s Wort is harvested around midsummer, when the flowering tops are fresh, vibrant, and full of color. When the blossoms are pressed, they release a deep red pigment — one of the beautiful signatures herbalists look for when working with this plant.

At Eclectic, we gather St. John’s Wort fresh from the wild and preserve it quickly. Like many delicate flowering herbs, it can lose some of its vitality through ordinary drying methods, so fresh handling matters.

That is why we freeze-dry St. John’s Wort soon after harvest, helping preserve its color, freshness, and naturally occurring plant compounds as close to the fresh plant as possible.

It is one of those herbs that captures the feeling of summer: golden, wild, and full of life.

From Field to Bottle

June harvest is a reminder of why fresh plants matter so much. Each herb has its own timing, its own personality, and its own short window when it is at its best.

Whether it is Milky Green Oats gathered in their fleeting green stage, Calendula blooming brightly on our farm, or wild St. John’s Wort flowering in the Oregon summer, we handle each plant with care from the moment it is harvested.

By fresh freeze-drying our herbs, we help preserve their color, vitality, and naturally occurring plant compounds — keeping them as close to fresh as possible.

It is busy, beautiful work, and one of the parts of Eclectic we are most proud to share.

FAQ

Are Eclectic herbs grown locally?

Many of our herbs are grown locally in Oregon or nearby organic farms, and some are wildcrafted. We also grow select herbs on our own farm.

Why does harvest timing matter?

Many herbs have a short window when they are at their best. Milky Green Oats, for example, are harvested during the brief “milky” stage before the plant moves on to seed.

Why does Eclectic freeze-dry herbs?

We freeze-dry herbs to help preserve their color, aroma, freshness, and naturally occurring plant compounds. It allows us to keep the plant as close to fresh as possible.
