  • 1½ cups (190 g) all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1½ tablespoons finely ground Earl Grey tea (from about 6 tea bags)
  • 1 tablespoon poppy seeds
  • 1 cup (240 g) full-fat Greek yogurt
  • 1 teaspoon vanilla extract
  • ½ cup (113 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature

Beet Cream Cheese Frosting

  • 8 ounces (226 g) cream cheese, softened

  • ½ cup (113 g) unsalted butter, softened

  • 1 teaspoon vanilla extract

  • 1–2 tablespoons beet powder (adjust for color)

  • 3 cups (360 g) powdered sugar

  • Pinch of salt

Instructions


  1. Prep the Pan & Oven

    • Preheat your oven to 350 °F (175 °C).

    • Grease a 9-inch round cake pan and line the base with parchment paper.

  2. Mix the Dry Ingredients

    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, finely ground Earl Grey tea, and poppy seeds.

    • Set aside.

  3. Combine the Yogurt & Vanilla

    • In a small bowl or measuring jug, stir together the Greek yogurt and vanilla extract until smooth.

  4. Cream Butter & Sugar

    • In a large mixing bowl, beat the butter and granulated sugar with an electric mixer (hand or stand) on medium speed until light and fluffy, about 2–3 minutes.

  5. Add the Eggs

    • Beat in the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.

  6. Bring It All Together

    • With the mixer on low speed, add the dry mixture in three parts, alternating with the yogurt mixture in two parts (start and end with the dry). Mix only until just combined to avoid overmixing.

  7. Bake the Cake

    • Pour the batter into the prepared pan, smoothing the top.

    • Bake for about 28–32 minutes, or until a toothpick inserted into the center comes out clean.

    • Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before frosting.
